Lemon Hummus Recipe

I love lemons, Mediterranean and Middle Eastern food. This lemon hummus recipe is easy to make and great to have on hand in the fridge for lunch or snacks.

This hummus can be used as a dressing on a salad, as well. Lemon and garlic make this tangy hummus a perfect dip.



Lemmon Hummus

From the kitchen of Priya Hutner

1½ C cooked dried chickpeas
or 1 large can of garbanzo beans
½ C tahini
2 T extra virgin olive oil
2 T fresh lemon juice
3-5 garlic cloves
1 t salt
1 t fresh ground pepper
Water as needed to blend

In a food processor or blender, add the chickpeas, tahini, olive oil, lemon juice, garlic and salt blend until smooth. Then add water as needed to blend and reach the desired consistency. Serve with crudité, pita bread or pita chips.
