Roasted Butternut Squash Ravioli
The American Bistro and Wine Bar, Spindleshanks, in Tahoe Vista offers a superb dining experience with options for dining on the deck with unobstructed views of Lake Tahoe, in the bar with daily Happy Hour specials or surrounded by beautiful artwork throughout the dining room.
Friend and wine columnist Barbara Keck and I enjoyed dinner at Spindleshanks recently, and Barbara will feature the restaurant’s wines in a future column.
Server extraordinaire Karina helped us with recommendations from the menu and we decided to start the evening with the Pan Roasted Artichokes and the Seared Ahi Tuna Napoleon.
The Pan Roasted Artichokes are one of my favorite dishes with roasted artichokes served with sautéed tomatoes and onions and a tasty aioli. Barbara enjoyed the Seared Ahi prepared with sesame, ginger, wasabi and a snow pea salad with crispy Gyoza Chips for a wonderful pairing of flavors.
For dinner, I chose the Roasted Butternut Squash Ravioli, while Barbara opted for the Grilled Rainbow Trout.
The ravioli were prepared with browned butter sage sauce and candied pecans, and
were light and flavorful and the browned butter sage sauce was wonderful; the best I’ve ever had. While the trout was perfectly prepared on top of a bed of spinach, bacon and tomato and served with a potato pancake, all served with a tasty roasted garlic Beurre Blanc .
We, of course, saved room for dessert. We split the Apple Crumble Tart with ice cream. The sweet and tart combination of the apples and the cinnamon was delightful. Another of my favorites is the Vanilla Bean Crème Brulee.
